The biggest headache (from my experience) is trying to find a date when everyone can come (it's impossible). So I'd suggest giving priority to ppl living outside HK.

I suggest you arrive during the day so you have more time to see the toy shops in HK, etc and we can then have dinner.
Assuming I'm in HK (I also need to spend my annual leave by end of June so I may be out of town)
